Summertime is the best time of year, especially when bountiful tomatoes are overflowing from gardens and Farmer's Markets. There is nothing like a vine-ripened, homegrown tomato. But, inevitably, not all of them will be eaten fresh. What to do with the extras?
One delicious way to make use of leftover tomatoes is to make a big batch of my Slow Cooker Ratatouille Stew. Ratatouille is a French vegetable stew that is usually made with eggplant, zucchini, onions, and garlic. I like to add in some leftover tomatoes for an extra dose of flavor and nutrition.
This ratatouille stew is really easy to make in the slow cooker. Just chop up the vegetables and add them to the slow cooker with some olive oil, herbs, and seasoning.
