Ingredients:

2 large eggs

1 tbsp. grated Parmesan cheese

1 tbsp. chopped fresh parsley

1/4 tsp. salt

Freshly ground black pepper to taste

1) In a medium bowl, whisk together the eggs, tomatoes, Parmesan cheese, parsley, salt and black pepper. 2) Heat a tablespoon of olive oil or butter in a medium nonstick skillet over medium-high heat until hot. Pour the mixture into the skillet and cook until the edges start to set and pull away from the sides of the pan. 3) Gently lift and fold one side of the omelette over towards the middle of the pan. Cook for about 30 seconds longer or until the egg is cooked through but still glossy on top. Serve immediately with freshly ground black pepper and red pepper flakes, if desired
